Oh my God how I love potatoes. Did I mention that before? All different sizes, all different ways to prepare them. This time I made twice baked potatoes. Potatoes prepared this way are very popular in USA so that’s where I got my inspiration for this recipe. Fluffy baked potatoes and then stuffed with delicious filling of cooked bacon, cheese and sour cream. And yes, lots and lots of green onions. A proper salad is a must so let’s begin with the recipe.

Twice baked potatoes

Ingredients:

  • 5-6 russet potatoes
  • 1/2 cup of sour cream
  • 6 strips of cooked bacon
  • 3 green onions
  • parmesan cheese
  • butter
  • salt and pepper
  • evoo
  • salad of your choice

Prep: Wash and clean the potatoes very well. Poke them with a fork and cover them in aluminium foil. Place them on a baking dish and bake them for 35-40 minutes or until fork tender. It all depends of the actual potatoes. When they are baked, uncover them, score them in the centre and fluff them with a fork. Put one knob of butter inside each potato, grate some parmesan cheese and put them back in the oven until they develop some color. Twice baked potatoes [♫The Potato Song]

 

Top them with your favorite toppings. Mine were cooked bacon, chopped green onions, extra cheese, sour cream and some tomatoes.
