Impress your mom and make her this breakfast for her very special day. Mother’s day is everyday, do not forget that, but that day and every day of the week, make her feel special!  Surprise her with this simple, yet so delicious breakfast. You can’t be wrong frying her strips of bacon and making her pancakes, right? She will enjoy this breakfast, for sure. The pancakes are special because they are topped with raspberries sauce and the eggs have crispy exterior and soft yolk 🙂 Fried eggs, bacon and pancakes for Mother's day [Momma, I Just Killed A Man]

Ingredients for the pancakes:

  • 1 cup of flour
  • 1 1/4 cup of milk
  • 1 tablespoon of sugar
  • 2 eggs
  • pinch of salt
  • 2 tablespoons of baking powder
  • 6 tablespoons of melted butter

Ingredients for the raspberry sauce: 

  • 250 grams of fresh raspberries
  • 1/2 cup of water
  • sugar, to taste
  • pinch of salt

Other ingredients:

  • strips of bacon
  • eggs
  • tomato
  • buns

Prep: First, make the batter for the pancakes. Mix all ingredients together and let the batter sit for 30 minutes. After 30 minutes, check the consistency, it should be thick like a yoghurt or buttermilk. Cook the pancakes on to a non stick pan with a little butter. Meanwhile, make the sauce just by mixing all the ingredients in one sauce pot. When the sauce will be thick, it’s done. Stack some pancakes on to a plate, put some powdered sugar and top them with a ladle full of the yummy sauce.

Then, fry the strips of bacon until crispy. In the same pan, fry the eggs. First, fry them on a high temperature, until the edges are crispy and then slowly turn down the heat, if you want a runny yolk. If not, fry a little longer. Slice the bun and toast it. Slice some tomatoes. Make one more serving for you or your whole family and enjoy.
