My Childhood Summer Lunch – Peppers and Tomatoes in a skillet | Ручек од детството: Пиперки и патлиџани [♫Leb i Sol – Kumova Slama]

♫Leb i Sol – Kumova Slama♫

I had one lovely childhood filled with excellent music. My father always was in charged of the music in our house, even today. Jazz is his thing. Jazz is always his thing. Soundtracks of epic movies. And Leb i Sol. He loves this Macedonian band. He taught me to listen music while eating, studying, walking… He taught me many things and listening to good music is one of them. Sometimes, I just play this song and so many childhood memories come to me. Sitting in the living room with tv on, my mom on the couch, my dad at the pc, my brother as a little baby and I… I was a special kid. Just observing my family and everything around me. Listening to everyone and everything. Introvert girl. Special one or maybe weirdo. This song will always remind me of my father. My dad says that he reads my blog. Hi dad 🙂My childhood summer lunch - Peppers and tomatoes [♫Leb i Sol - Kumova Slama]

Peppers and tomatoes in a skillet

  • 4 large tomatoes
  • 6-8 green peppers
  • 3-4 garlic cloves
  • evoo
  • salt and pepper

Prep: In a skillet put some evoo. Cut the peppers into chunks and add them to the skillet. On a medium heat fry the peppers with occasional stirring.  When the peppers will be almost cooked and soft, add the tomatoes cut into bite size pieces. Stir and cover with a lid until they are soft. At the end, add the garlic, finely chopped, season with salt and pepper and turn off the heat. Everything should be soft and almost mushy consistency. Cover with a lid and let it cool slightly before serving. We usually serve this with a crusted bread, olives and white cheese.

Homemade Chicken Noodle Soup | Домашна пилешка супа [♫Brook Benton – Rainy Night in Georgia]

♫Brook Benton – Rainy Night in Georgia♫

Nothing is more comfortable than a BIG bowl of chicken noodle soup, fuzzy blanket, soft couch, rainy evening and tv on. I love fall. I miss fall so much. Today it was raining in Skopje and I felt so good when I went outside right after the rain stopped. Cold and fresh air, wet streets, a little bit chilly…

When I want to be reminded of fall, I always make my version of chicken noodle soup. Call me old fashioned, call me granny but I love making soups when the weather is chilly. Nothing better that poached chicken, soft noodles and lots of lemon juice. Here is my recipe for this deliciousness.Homemade chicken noodle soup 2

Homemade chicken noodle soup

  • 2 chicken breasts
  • 1 medium carrot
  • 1 handful of spinach
  • 1 handful of mushrooms (I used shiitake)
  • 1 potato
  • 2 garlic cloves
  • 1 handful of noodles
  • 1 spring onion
  • salt and pepper

Prep: In a pot put 4 cups of water. Put the chicken in the pot, along with the potato, garlic, carrot cut into equal cubes. Simmer for 20-25 minutes, or until the chicken is tender and cooked. When cooked, take the chicken, let it cool and shred the meat. Now, add the shredded meat, noodles, sliced mushrooms, spinach and season with salt and pepper to taste. Cook on low until the pasta is ready. Garnish with spring onions and serve.Homemade chicken noodle soup 1
